Apple-Orange Honey Loaf

Ingredients
  • 2 large oranges
  • 1 cup seedless raisins
  • 2 cups applesauce
  • 1 cup honey
  • 4 cups sifted flour
  • 4 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 cup sugar
  • 1 1/2 tsp. salt
  • 1 1/2 cup chopped nuts
  • 2 eggs, beaten
  • 6 Tbsp. melted butter

Directions

Squeeze juice from oranges. Using a medium blade, put rind and raisins through food chopper. Add orange juice, rind, and raisins to applesauce; stir in honey. Sift together flour, baking powder, soda, sugar, and salt. Add applesauce mixture and nuts; mix. Add eggs and melted butter; mix well. Pour into 2 greased loaf pans. Bake at 350 degrees F for 1 hour and 15 minutes. Remove from pans and cool on wire rack. The bread will slice better if allowed to stand 12 hours.
