These make a great, light, fluffy pancake!
- 3 egg yolks
- 1 2/3 cup buttermilk
- 1 tsp. baking soda
- 1 1/2 cup sifted flour
- 1 tsp. baking powder
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 3 Tbsp. melted butter
- 3 egg whites
- Beat 3 egg yolks with rotary beater. Beat in buttermilk and soda well.
- Sift together dry ingredients and add to egg yolk mixture.
- Beat in 3 Tbsp. melted butter and fold in egg whites that have been stiffly beaten. Mix all together well.
- Bake in hot skillet until done, about 7-10 minutes each. (Cooking time may vary some.)
Servings: 16 (4in.) pancakes
