Fluffy Pancakes

These make a great, light, fluffy pancake!


  • 3 egg yolks
  • 1 2/3 cup buttermilk
  • 1 tsp. baking soda
  • 1 1/2 cup sifted flour
  • Ad
  • 1 tsp. baking powder
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 3 Tbsp. melted butter
  • 3 egg whites


  1. Beat 3 egg yolks with rotary beater. Beat in buttermilk and soda well.
  2. Sift together dry ingredients and add to egg yolk mixture.
  3. Beat in 3 Tbsp. melted butter and fold in egg whites that have been stiffly beaten. Mix all together well.
  4. Bake in hot skillet until done, about 7-10 minutes each. (Cooking time may vary some.)

Servings: 16 (4in.) pancakes
Prep Time: 15-20 Minutes
Cooking Time: about 7-10 Minutes
