Apple-Bran Muffins


  • 2/3 cup sugar
  • 2 large eggs
  • 2 1/2 cups peeled and diced green apples
  • 1 1/4 cups flour
  • 3/4 cup bran
  • Ad
  • 1 1/2 tsp. each baking soda and cinnamon
  • 1/2 tsp. each baking powder and salt
  • 3/4 cup raisins


Coat muffin cups with cooking spray. Combine sugar and eggs; mix well. Stir in apples. Combine flour, bran, baking soda, cinnamon, baking powder, and salt; stir into apple mixture. Stir in raisins. Spoon into prepared muffin cups. Sprinkle evenly with Streusel Topping. Bake at 350 degrees F for 25 minutes or until done.

Streusel Topping:

  • 1/4 cup sugar
  • 2 Tbsp. flour
  • 1/2 tsp. cinnamon
  • 2 tsp. butter or margarine


Combine sugar, flour and cinnamon. Stir in butter or margarine. Mix with fork or fingertips to make a fine crumb mixture.
