I am looking for a recipe for cucumbers, onions in a small amount of dice bell peppers with vinegar in sugar water. This recipe is one you can freeze and eat all year. Hope some one has this.

Go to cooks.com cucumbers to eat at once or freeze the recipe is great

7 c. sliced cukes
1 c. sliced onion
1 c. sliced green pepper I used red and yellow
2 c sugar
1 cup white vinegar
1/2 tsp. salt
1 tsp. celery seed

Combine cukes, onion and pepper. Mix remaining ingred.
until sugar is dissolved. Pour over cukes, cover and refridge or freeze.

Thanks to each one who share a recipe.I chose the one from Steph, that was more to what I had eaten.These cucumbers are so good, in yes they do have a small crisp to them.

Frozen Cucumber Salad

8 cups peeled, slice cucumbers
2 onions, sliced
2 Tbsp canning salt

Sprinkle salt over cucumbers & onions. Let stand 2 hours. Drain but do not rinse.

Syrup: 1 cup white sugar; 1/2 cup white vinegar. Mix well & pour over cucumbers. put in freezer containers and freeze.

I've made this many times and add peppers if I have any.

7 c. thinly sliced cucumbers
3 med. onions, sliced
1 green pepper, chopped
2 c. sugar
1 c. vinegar
1/2 tsp. celery seed
1 tbsp. salt

Mix all ingredients in large bowl. Refrigerate for 24 hours. Put in containers and freeze. Great side dish in the middle of winter. Just defrost to serve.

I have made this Garden Salad, could this be it? Never thought about freezing it though. Here it is...

Garden Salad

Date: 04/18/2008

Ingredients
2 plum tomatoes, chopped finely (I used 4)
1 cucumbers, chopped finely (I used 2)
1 green bell pepper, chopped finely
1 cup onion (can use white, red or green spring)
Dressing:
3/4 cup sugar (I thought this was a little too much)
1 cup vinegar
1/2 tsp. salt
1/2 tsp. pepper
Directions
Mix salad ingredients together in a large bowl. Mix dressing ingredients together and pour over veggies. Mix thoroughly, chill and then serve.
