Ingredients

  • 2 lbs. ground beef
  • 1 medium onion, chopped
  • 2 tsp. garlic, minced
  • 1 can black olives, sliced
  • 1 can green chilies, diced
  • 1 can diced tomatoes with green chilies

  • 1 jar taco sauce (16oz.)
  • 2 cans refried beans (16oz. each)
  • 12 flour tortillas (8 inch size)
  • 1 bag Colby cheese, shredded

Directions

Preheat the oven to 350 degrees F. In a large skillet, over medium heat, saute' the ground beef for 5 minutes and dd the onion and garlic. Saute' for an additional 5 minutes. Drain any excess fat and mix in the olives, green chilies, tomatoes with green chilies, taco sauce and refried beans. Stir the mixture thoroughly. Reduce the heat to low, and let simmer for 15-20 minutes. Spread a thin layer of the meat mixture in the bottom of a 4 qt. casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all of the tortillas are used, topping it off with a layer of meat mixture and cheese. Bake for 20-30 minutes or until the cheese is slightly brown and bubbly.
