Lemon Pound Cake

Ingredients

  • 2 sticks margarine
  • 3 cups sugar
  • 1/2 cup oil
  • 1 cup milk
  • 6 eggs, room temperature
  • 2 tsp. vanilla
  • 1 Tbsp. pure lemon extract

Directions

Using high speed, mix margarine, sugar and oil until smooth. Add 3 cups flour, 1 cup at a time. Add milk and eggs, 1 at a time. Beat well after each egg. Add vanilla and lemon extract. Bake at 325 for 1 hour. Do NOT open oven door first hour; then 15 minutes at 375 degrees F.

I would think since this is a pound cake that you would use a bunt pan for this recipe. It sounds good and I am going to try it. Thanks for the recipe.
