Lowfat Oatmeal Bran Muffins
- 1 cup oats
- 1 cup skim milk
- 2 egg whites
- 1/2 cup brown sugar
- 1/4 cup oil
- 1 cup flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1 crushed ripe banana
Combine oats and milk; let stand for 20 minutes. Mix all ingredients and bake at 400 degrees F for 30 minutes.
Note: You can use part oat bran in place of oats.
