I need to make a cake or dessert for a co-worker who is on a diet. Any suggestions?

Angel food cake with strawberries and Cool Whip on it.
Good idea, they have fat free cool whip too, that tastes wonderful. Also, you could do like a sugar-free upside down pineapple cake.
How about this recipe:
Two Ingredient Cake
1 (18.25 ounce) package spice cake mix
1 (15 ounce) can pumpkin
1. Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
2. In a large bowl, mix together the spice cake mix and canned pumpkin until well blended. Spread evenly into the prepared pan.
3. Bake for 25 to 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Cool and serve, or store in the refrigerator. This tastes even better the next day.
I've used choc cake mix and like that a lot. I've also added a few tablespoons of water if it is just too hard to mix.
Angel Food cake is my favorite. On April 13, 2010, I posted a recipe for Gluten Free Angel Food Cake. You can substitute cake flour for the Gluten Free flour. This cake turns out beautiful and the taste is so much better than the cake mix or store bought.
