Italian Sausage Bake

Ingredients

  • 1 lb. Italian sausage
  • 1 cup chopped tomatoes
  • 1 cup chopped green peppers
  • 1 cup chopped onions
  • 6-8 yellow squash
  • cheese (mozzarella and Parmesan, shredded not the kind in a can)
  • bread crumbs (we used crushed croutons)
  • Salt, Pepper, and garlic powder

Directions

Fry sausage and drain. Put tomatoes, peppers, onions and sausage in a bowl. Add salt, pepper, and garlic powder to taste. Mix in bowl. Slice squash. Put layer of squash in bottom of 9x13 dish. Next add a layer of mixture. Then layer of cheese. Repeat layering. Add bread crumbs to top and brown until cheese is melted. Bake at 375 degrees F.

We have made this with and without bread crumbs and it is good either way but I prefer bread crumbs.

How long do you bake this for? It sounds like something I would like to try since I just picked about 8 yellow squash from our garden tonight!

Pasta and Sausage Bake

Love the Italian sausage in this recipe.

Ingredients:

  • 1lb. Italian sausage, cut up
  • 1 jar spaghetti sauce (15oz.)
  • 8oz. mostaccioli, cooked and drained
  • 1/3 cup grated Parmesan cheese
  • 1 pkg. shredded Mozzarella cheese (4oz.)

Directions:

In skillet, brown sausage; drain. Combine sausage, sauce, mostaccioli, and Parmesan cheese in greased 2 qt. baking dish. Top with mozzarella cheese. Bake at 350 F for 15-20 minutes, or until heated through.

Servings: 4-6
Prep Time: 15-20 minutes
Cooking Time: 15-20 minutes
