Pasta with Fresh Vegetables
Our family loves pasta. This recipe can be used as a side dish, or if you want to add a little meat to it, it can become a main dish as well.
- 1 clove garlic, minced
- 1 1/2 cups whole kernel corn
- 8 oz. fresh green beans, cut into thirds
- 3 Tbsp. olive oil
- 1/2 tsp. each oregano and rosemary
- 1 Tbsp. basil
- 3 tomatoes, chopped
- 1/4 cup chopped parsley
- juice of 1 lemon
- 1 (16 oz.) pkg. pasts, cooked and drained
- salt and pepper, to taste
Cook garlic, corn, and beans in olive oil over medium heat in skillet until tender-crisp. Add next 6 ingredients. Simmer until heated through. Toss with pasta in bowl. Season with salt and pepper.
Prep Time: 10-15 Minutes
Cooking Time: 15 Minutes
