Hearty Taco Bake

If you are looking to do something with left over tortilla chips or something different with flour tortillas, try this recipe for Taco Bake.

Ingredients

  • 1 lb. of ground beef (or shredded cooked chicken, turkey, venison etc)
  • 1 cup salsa*
  • 1 can kidney beans, drained
  • 1/2 cup milk
  • 1 can tomato soup
  • 6 flour tortillas or equivalent in tortilla chips
  • 2 cups shredded cheese of choice (cheddar works well)
*You can also add chili powder to 1 cup of diced tomatoes if you do not have salsa.

Directions

Cook your meat. Using a 2 quart casserole dish, mix together the meat, soup, beans, tortillas, and half of the cheese. Sprinkle the remaining cheese on top. Cover with foil and bake at 400 degrees F for about 30 minutes. Serve hot with sour cream and more salsa if desired.

My family likes this with a side dish of corn.

Did you forget about the salsa or is it not needed? If it is, when do you add it? Is it just served on the side?

I am a little confused. What or how do you use the tortillas? Do you tear them up or shred them and just mix it all together?
