Reuben Meatloaf

Ingredients:

  • 1 egg
  • 1 cup soft bread crumbs
  • 1/2 cup chopped onion
  • 1/4 cup sweet pickle relish
  • 1/4 cup Russian dressing
  • 1 1/2 lbs. ground beef
  • 1 Tbsp. Worcestershire sauce
  • 8 oz. can sauerkraut, drained
  • 1 cup shredded Swiss cheese

Directions:

Mix egg, bread crumbs, onion, relish, dressing, Worcestershire sauce and ground beef. Flatten and shape into a triangle. Spread sauerkraut and Swiss cheese on the triangle. Roll up like a jelly roll with the open end down and bake for 50 minutes in a 350 degrees F oven. The last 15 minutes sprinkle with more Swiss cheese on top. Serves 8.
