A fast meal for two.
On a platter, place two potatoes, cleaned, pricked, and wrapped in paper towels. Microwave until fork tender, approximately 5-6 minutes. When done, take out potato and unwrap, cut a slit in the potato and sprinkle 1/2 cup crab and 1/2 cup cheese on top of each potato and microwave again until the cheese is melted.
That's it, you're ready to eat. In less than 20 minutes, you have a hot and healthy meal. (You may want to add garnishes such as crispy bacon bits, chives, paprika, etc.)
