Looking for Inexpensive Reduced Fat Cheese

Here's an idea for a inexpensive low-fat cheese that won't, however, have the consistency of most others: Indian paneer. It's simple. Just heat (not boil) milk in a pan -- I use non-fat dry milk packets w/ water for the milk --- & slowly add a little lemon juice or white vinegar until the curds rise on the surface. Drain these curds in something like cheesecloth & use something like a bacon press or other heavy item to compress it as it drains. The result will be a bar/slab of cheese that you find cubed in Indian stews. Good luck!

We try to eat healthy, too, so we limit the cheese we include in our diet, I cut amounts in half for recipes, and we use Mozzerella and Fat Free Parmesan for most things. You just have to choose sometimes. Your health or your pocketbook. And what you save at the grocery store, you will probably spend at the Doctor's office.
