With a base of cottage cheese you can add just about anything you want.

Ingredients:

Just add your favorite vegetables to the cottage cheese mixture. My favorite options:

  • finely chopped green pepper
  • finely chopped onion or green onion
  • Directions:

    Make sure to drain any ingredients you add, mix your ingredients and enjoy. With summer coming on and the fresh tomatoes this will be one of my main foods.

    Directions:

    With a mixer beat the cottage cheese until nearly smooth. Add whipping cream. Set aside. Then in a large mixing bowl combine the sugar, flour, and salt. Stir in the slightly beaten egg and egg yolk, corn syrup, and melted butter. Stir in the cottage cheese mixture.

    Pour mixture into baked pastry shell and bake ar 350 degrees F. for 45-50 minutes or until a knife inserted near the center comes out clean. Cool pie. Place in refrigerator for 4 hours before serving. Top with slices of lemon or orange.

    Serves 8.

    In large bowl, combine beaten egg, Worcestershire sauce, salt, mustard and pepper. Add meat, cottage cheese, onion and green pepper; mix lightly but thoroughly. Shape into a loaf in baking pan.

    I found this recipe in a book many years ago, it has since been a family favorite.

    Ingredients:

    • 4 eggs (hard boiled)
    • 250 gram (8 oz.) tub low fat cottage cheese
    • 1/4 cup light cream
    • 2 tsp. German mustard
    • 1 Tbsp. horseradish cream
    • 3 spring/green onions (finely chopped)
    • paprika (to sprinkle)

    Directions:

    Shell the eggs and place into a food processor with the cottage cheese and cream. Blend until smooth. Add the mustard and horseradish cream. Season to taste with salt and pepper and add the chopped onions. Pulse to combine.

    Transfer to a bowl and sprinkle with paprika. Chill. Serve with crackers and vegetable crudites.

    This is ideal to make ahead of time and keep refrigerated ready for using.

    Beat eggs and add all ingredients. Cover with foil and refrigerate overnight. Uncover and put in 8 inch baking dish. Bake at 325 degrees F for 40-50 minutes. Cool 10 minutes.

    For a refreshing and quick meal, chop up a tomato, some avocado, onion and fresh bell pepper into a scoop or 2 of cottage cheese. Can add a dash of fresh Parmesan cheese, or not. Can be served with crackers.

    Combine water and gelatin and soften in the double boiler. Add the cottage cheese, which should be quite dry. When cool combine with other ingredients.
