Cucumbers turn to a mushy unusable mess when they're frozen unless they're prepared by some sort of pickling.

I've personally never tried this old fashioned recipe but I've seen it several times over the years so it must be pretty good and it's worth trying if you have a lot of cucumbers that are going to spoil:

FREEZER PICKLES:

7 cups sliced cucumbers
1 cup chopped onions
1 cup chopped green bell peppers
1 cup vinegar
1 tsp celery seed, if desired
1 tbsp salt
2 cups sugar

Mix vinegar, celery seed, salt and sugar until sugar dissolves. Mix the cucumbers, onions and pepper in a separate bowl. Pour vinegar mixture over cucumber mixture and gently stir. Allow to rest for about 15 minutes. Transfer to freezer containers and freeze.
