Today we visted Baja Express, and I think I am in LOVE! Does anyone have a copycat recipe for Salsa Baja? It is a thin brown salsa (not at all hot) that has fresh tomato, onion, and cilantro. It almost tastes like it has coffee in it, but the waitress said it is just roasted tomatoes. Don't know what it is, but it is YUMMY!
I'm not sure what the recipe is but I would really like to know it. I absolutely LOVE the salsa and a baja fresh is like 300mi away from where I live because they took all of the ones out of Indiana - stupid people.
the toasted flavor is from roasted tomatoes and chilies to do this; rinse veggie poke a few times with fork place on a open gas flame and keep moving veggie ( i do this with bare hands a large fork is ok) then peel the skin off it turns black and don't worry some of the black skin gets into salsa only more flavor this is same thing Chevy's does...I think then make your salsa like normal my mom used long green chili they are the flavor not HOT, my mom never puts jalapenos in our salsa she does add some tiny bright green SERRANOS which are deadly HOT use gloves to handle those (TRUST ME) she diced those up teeny-tiny and her salsa was and is the BEST... Mexicans from CA tend to use carrots and jalapenos in a vinegar pickling base and put those on tables.. (at least we did) let me know if this works for you my girlfriend used to roast her veggies in micro placing them in a brown bag and nuking them till the skin peels off.
