I have some leftover Arepas which are are Mexican corn meal griddle cakes made with masa flour. Any suggestions for leftovers? I made too many.

Thanks,
Holly from Richardson, TX

I used the recipe on the package. Goya brand Masarepa. The package says, "enriched yellow cornmeal" and does not indicate masa.

2 cups masarepa
1 tsp salt
3 c. warm water
butter for grilling

1. In bowl, combine Masarepa, salt and water. When dough is mixed, let stand for 5 mins.

2. Form dough into patties about 4 to 5 inches across and 1/2 inch thick.

3. Coat a skillet with a small amount of butter. On medium, cooke arepas until lightly browned on each side.

4. Serve with cream cheese, butter or mozzarella.
Variation: mix some shredded cheese into dough before making patties.

What diameter are they? I think they would be great for a breakfast buritto (with leftover picadillo - seasoned hamburger) Or freeze and pop in the toaster?
