Kashi Oatmeal Dark Chocolate Chip Cookies (Copycat)

These taste just like the Kashi chewy oatmeal dark chocolate chip cookies. Good way to use up granola

Ingredients:

  • 1 cup whole wheat pastry or unbleached flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 stick butter
  • 2/3 cup turbinado (raw) sugar
  • 1/2 tsp. vanilla
  • 1 lg. egg
  • 1 cup granola (food process if it is chunky)
  • 3/4 cup semisweet chocolate chips (I used the Sunspire brand)

Directions:

Mix flour, soda, salt, butter, sugar and vanilla together. Beat with electric mixer on medium 3 minutes. Add egg, reduce mixer to low, and beat in. Add granola and chocolate chips. Drop by heaping tablespoons on to greased cookie sheet. Pat down slightly with a fork.

Bake at 375 degrees F. (preheated) for 8-10 minutes. Cool on cookie sheets 1 minute, then transfer to cooling rack to cool completely.

I love this recipe! I used brown sugar to cut down on the cost and I used Bob's Red Mill 5 grain + flax mix instead of the granola (because I had it in the pantry). This is my new favorite cookie! I am about to make another batch today! Thanks for the recipe!

Does anyone have a recipe for Kashi Oatmeal dark chocolate cookies? I can't figure it out because their ingredient list is long and some of the ingredients are hard to find.
