This is a great recipe for snacks, lunch box or special occasions.
Ingredients
- 1/2 cup melted butter (plus a little extra)
- 1/2 cup caster* sugar
- 3 ripe bananas
- 2 eggs
- 1 tsp. vanilla essence extract
- 2 cups self raising flour
- 1 cup desiccated coconut
- 1/2 cup dark chocolate chips
*Very fine sugar
Directions
Preheat oven to 400 degrees F. and put Patty Pans (like small
paper cups) into 12 hole muffin pan.
Whisk together butter, sugar, bananas, eggs and vanilla until well combined. Place flour, coconut and chocolate chips in a large bowl, then fold in the banana mixture.
Place tablespoons of mixture into the paper cups in muffin pan and bake for 15 minutes or until golden brown. Cool slightly in the pan, then put on rack to cool. You can serve with dusting of icing sugar, if want to serve straight away.
These freeze very well for lunch boxes.
