Banana Coco-Choc Mini Muffins

Tasty Choc Banana mini muffins that taste great, and are ideal for children's lunchbox. They also freeze well.

Ingredients:

  • 125 grams (1/2 cup) melted butter
  • 1/2 cup castor sugar*
  • 3 ripe bananas
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups self-rising flour
  • 1 cup desiccated coconut
  • 1/2 cup dark chocolate chips.
*Also known as 10x or superfine sugar

Directions:

Preheat oven to 200 degrees C (400 degrees F). Grease a 12 hole mini muffin pan (if you don't have one, use paper patty inside muffin holes).

Whisk together butter, castor sugar, banana, eggs, and vanilla until well combined.

Place flour, coconut and chocolate in a large bowl, then fold in the banana mixture.

Place dessert spoonfuls of mixture into muffin pans and bake for 15 minutes or until golden brown. Cool slightly in the pan then turn out onto a rack to cool.

Serve dusted with icing sugar.

Cooking Time: 15-18 Minutes

Butter should be 125 grams (1/2 cup shown as 12 cup which is incorrect)
