Chocolate Chip Banana Muffins

  • 125 grams (1/2 cup) melted butter
  • Advertisement

  • 1/2 cup castor sugar*
  • 3 ripe bananas
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups self-rising flour
  • 1 cup desiccated coconut
  • 1/2 cup dark chocolate chips.
*Also known as 10x or superfine sugar


Preheat oven to 200 degrees C (400 degrees F). Grease a 12 hole mini muffin pan (if you don't have one, use paper patty inside muffin holes).

Whisk together butter, castor sugar, banana, eggs, and vanilla until well combined.

Place flour, coconut and chocolate in a large bowl, then fold in the banana mixture.

Place dessert spoonfuls of mixture into muffin pans and bake for 15 minutes or until golden brown. Cool slightly in the pan then turn out onto a rack to cool.

Serve dusted with icing sugar.

When the warmer weather causes your bananas to turn quickly, throw them in the freezer, and on a cooler day pull out a bunch to whip up a batch or two of these super moist and yummy muffins for a quick breakfast or snack.

Put flour, sugar, baking powder, salt & chocolate chips in a bowl. Mix and make a well in the center.
