Tasty Choc Banana mini muffins that taste great, and are ideal for children's lunchbox. They also freeze well.

Ingredients:

  • 125 grams (1/2 cup) melted butter
  • 1/2 cup castor sugar*
  • 3 ripe bananas
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups self-rising flour
  • 1 cup desiccated coconut
  • 1/2 cup dark chocolate chips.
*Also known as 10x or superfine sugar

Directions:

Preheat oven to 200 degrees C (400 degrees F). Grease a 12 hole mini muffin pan (if you don't have one, use paper patty inside muffin holes).

Whisk together butter, castor sugar, banana, eggs, and vanilla until well combined.

Place flour, coconut and chocolate in a large bowl, then fold in the banana mixture.

Place dessert spoonfuls of mixture into muffin pans and bake for 15 minutes or until golden brown. Cool slightly in the pan then turn out onto a rack to cool.

Serve dusted with icing sugar.

When the warmer weather causes your bananas to turn quickly, throw them in the freezer, and on a cooler day pull out a bunch to whip up a batch or two of these super moist and yummy muffins for a quick breakfast or snack. I've tried many banana muffin recipes but this one is the best. Maybe the yogurt is the secret?

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, oil, yogurt and vanilla. Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips.

Fill greased or paper-lined muffin cups two thirds full. Bake at 350 F. degrees for 22 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

An easy way to use up 3 bananas and get a nice dessert, are these quick and easy chocolate chip banana muffins!

Cook Time: 15-20 minutes

Total Time: 20-25 minutes

Yield: 12 muffins

Ingredients:

  • 1 1/2 cup white whole wheat pastry flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup agave
  • 2 tsp chia seeds
  • 2 tsp hemp seeds
  • 1 eggs
  • 3 Tbsp olive oil
  • 2/3 cup milk
  • 3/4 cup semi sweet chocolate chips
  • 3 ripe bananas

Steps:

  1. Add all of your dry ingredients in a large bowl.
  2. Add your wet ingredients into the same bowl.
  3. Chop your ripe bananas into thin slices so it'll be easier to mash up when stirring. Add in your chocolate chips.
  4. Preheat oven to 400 degrees F. Bake for 15-20 minutes, or until ready.
