  • 3 Tbsp. brown sugar
  • 1 Tbsp. sour cream
  • 1/3 cup broken pecans
  • 3 small bananas
  • 1 egg, slightly beaten
  • 1/2 cup sugar
  • 1/4 cup oil
  • 1 1/2 cups package pancake mix


In a small bowl stir together brown sugar and sour cream. Stir in pecans. Set aside. Mash bananas. In a medium bowl, stir together egg, sugar, oil and mashed bananas until well blended. Add pancake mix, stirring until just moistened. Grease muffin cups or line with paper bake cups; fill 2/3 full with batter. Drop 1 tsp. of pecan mixture atop each muffin. Bake in 400 degrees F oven for 12-15 minutes or until golden brown. Makes 12 muffins.

  • 2 cups of all purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 stick unsalted butter, softened
  • 3/4 cup of brown sugar, packed
  • Ad

  • 2 large eggs
  • 4 very ripe bananas, mashed
  • 3/4 cup walnuts, chopped


Preheat the oven to 350 degrees F. Spray a muffin pan with butter flavored PAM, and set aside. Combine the flour, baking soda and salt in a large bowl.

In a separate bowl, mix the softened butter with the brown sugar until well creamed; add the eggs and mix in, then add the mashed bananas and walnuts. Add to flour and mix together very lightly. I like large muffins so I use an ice cream scoop to fill the muffin tins. This works out to fill 10 of the 12.

Bake at 350 degrees F for about 20 to 25 minutes, checking first at about 15 mins. Use a clean toothpick to insert in muffin to check - if the toothpick comes out clean, they are done. Let cool in the muffin tin for a few minutes, then remove to a wire rack to finish cooling. Yummy!

  • 2 cups Bisquick baking mix
  • 1/4 tsp. baking soda
  • 2/3 cup sugar or sweetener
  • 2 eggs, beaten
  • 3 bananas, ripe and mashed



Mix thoroughly all ingredients. Bake at 350 degrees F until they test clean. Makes 1 1/2 doz. muffins.

Here is recipe that is very good. I usually double the muffin part and make a single batch of the topping because it makes way to much. I also make them in regular size muffin tins and increase the baking time to 18-20 minutes.


Peanut Butter Banana Muffins

1 cup old-fashioned oats
1 cup whole wheat flour
1/2 cup all purpose flour
1/2 cup sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg
3/4 cup milk
3/4 cup mashed ripe banana
1/2 cup creamy peanut butter
1/3 cup unsweetened applesauce
1/2 tsp. vanilla extract
3/4 cup mini semisweet chocolate chips

1/3 cup packed brown sugar
1/3 cup dry roasted peanuts, coarsely chopped
1/3 cup mini semisweet chocolate chips

In large bowl combine first seven ingredients. In small bowl combine remaining ingredients except for chocolate chips. Stir into dry ingredients just until moist. Fold in chocolate chips.
Fill greased or paper-lined mini muffin cups three-fourths full. For topping, combine ingredients in small bowl and sprinkle over muffins. Bake at 350 F. for 10-13 minutes or until toothpick inserted in center comes out clean.


Cool for 5 minutes before removing from pans to wire rack. Serve warm.
