Banana Comfort Muffins

Now that fall is fast approaching, it is also time for those great smells of baked fall comfort foods. To start the season, I will make yummy banana muffins! These muffins are a favorite and do well for breakfast, in lunch boxes, on the run, or with a hot beverage. Here is how!

Prep Time: 15 min

Cook Time: 30 to 40 min

Total Time: 1 hour

Yield: 6 jumbo/12 reg.

Ingredients:

Steps:

  1. Preheat oven 350 degrees F.
  2. In a mixing bowl stir bananas, and add melted butter. Blend. Mix in baking soda and salt.
  3. Add sugar, beaten egg, and vanilla extract. Mix in flour.
  4. Prepare baking pans, fill and bake.
  5. Use tooth pick tester in center of muffin to make sure it is done.
