1 1/2 lbs. boneless chicken breast, cut into 1 inch pieces
1 can (10 3/4 oz.) cream of chicken soup
1/3 cup sour cream
1 (16 oz.) bag frozen mixed vegetables, thawed and drained
1 cup hot water
Directions
Preheat oven to 400 degrees F. Sprinkle 1/2 c.of stuffing mix evenly on bottom of 9x13 inch pan. Top with chicken. Mix soup, sour cream and vegetables. Spoon over chicken and set aside. Add remaining stuffing with hot water, mix just until moistened. Spoon over vegetable mixture and bake 30 minutes or until chicken is cooked through.
