Virginia Batter Bread
- 1/2 cup cornmeal
- 1/2 tsp. soda
- 1/2 tsp. baking powder
- 1 cup buttermilk
- 1 egg, slightly beaten
- 2 Tbsp. butter, melted
- 1 tsp. salt
Mix dry ingredients; add buttermilk and egg. Add melted butter. Bake in buttered casserole about 25 minutes at 425-450 degrees F. After the first 5 minutes in the oven, pierce the top with a fork to break the crust. Serves 4.
