Figger, I can't help but ask if you've tried to freeze your fried cucumbers and, if so, were they okay? I also fry cucumbers and, although they might still taste okay because of the spices used, I personally wouldn't like the mushiness of not only the cucumber but also the breading after thawing. I'll give it a try next time I fry some up though and will post the outcome. ;-)
I like fried cucumbers. I fix them like squash. I looked online and it says that you can freeze them. I also have a cook book that says you can. Just being nosy I guess.
I wouldn't really recommend freezing cucumbers whether breaded or not but I suppose you could freeze them without the breading as a filler for a soup or stew but there wouldn't be much flavor. Even breaded, whether you fry or bake them before or after freezing, would be horribly mushy because of the water content in the cucumbers!
If you happen to have lots of cucumbers why don't you pickle them? There are lots of pickling recipes online and a couple of easy Refrigerator Pickle recipes online too.
