Lentil Pasta Salad

Ingredients:

  • 1 cup dried lentils
  • 4 cups water
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 2 Tbsp. chopped pimento
  • 1 cup thin cooked spaghetti
  • 1 cup chopped celery
  • 1 cup fresh, sliced mushrooms
  • 1 tomato, seeded and chopped

Dressing:

  • 1/4 cup safflower oil
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. Dijon mustard
  • 1/4 tsp. Worcestershire sauce
  • 1/2 tsp. oregano
  • Sprinkle of chili powder
  • pepper
  • dried parsley

Directions:

Break the thin spaghetti into 3 inch lengths before cooking. Cook the lentils until tender but firm. Drain well. Combine with cooked spaghetti and vegetables. Combine dressing ingredients and pour over lentil, spaghetti, and vegetable mixture.
