- 2 cups sliced onions
- 3 Tbsp. butter
- 5-6 red peeled tomatoes (fresh)
- 2 green peppers
- 3-4 zucchini
- salt and pepper, to taste
Brown 2 cups sliced onions and 2 green peppers, sliced, in 3 tablespoons butter until tender. Add 3 or 4 zucchini, cut into 1 inch pieces and 5-6 medium fresh red peeled tomatoes. Salt and pepper, to taste. Cover and simmer until vegetables are tender but still hold their shape, about 10 minutes.
