Apple Meat Loaf
This is a slightly different version of a meatloaf made with raw apples instead of using apple sauce. This is delicious served with rice, mashed potatoes, or green beans and hot rolls. Enjoy!
- 1 large onion, finely chopped
- 2 Tbsp. butter, melted
- 2 1/2 pounds lean ground beef
- 1 1/2 cups fresh bread crumbs
- 2 cups apples, peeled, cored and finely chopped
- 3 eggs, lightly beaten
- 1 Tbsp. chopped parsley
- 1/2 tsp. black pepper
- 2 tsp. salt (or less if you like)
- 1/4 tsp. ground allspice
- 1/4 tsp. dry mustard
- 1/4 cup catsup
Saute onions in butter until soft. Combine all ingredients, mixing thoroughly. Form into loaf and place in 10x14 inch baking pan (or pack into a large greased loaf pan). Bake at 350 degrees F for 1 hour. Remove from oven and allow to sit for 10-15 minutes before serving.
