Zucchini Carrot Muffins
- 1 pkg. carrot cake mix
- 1 egg
- 1/2 cup applesauce
- 1/4 cup vegetable oil
- 1 1/2 cups shredded zucchini
- 1/2 cup raisins
- 1/2 cup chopped pecans
In a mixing bowl, combine the cake mix, egg, applesauce and oil; mix well. Stir in the zucchini, raisins and pecans. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 degrees F for 25-30 minutes or until muffins test done. Yield: about 16 muffins.
