Bahamian Boiled Fish

Easy and healthy.

Ingredients

  • 1 1/2 lb Snapper
  • 2 large potatoes, peeled and sliced
  • 1/4 cup onion, diced
  • 1/4 cup butter, melted
  • 1/4 cup lime juice
  • 1/4 tsp thyme
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp red pepper flakes

Directions

Layer Snapper, potatoes and onion in medium pot. Mix butter, lime juice, thyme, salt, pepper, red pepper flakes and drizzle evenly over Snapper and potatoes. Cover and cook over medium heat for 25 to 30 minutes.

For a full course Bahamian meal experience serve with Pea Soup, Johnny Cakes or Corn Bread and Fresh Tropical Fruit of your choice.

Source: Was tired of the same cuisine I've been eating lately so decided to raid my recipe box for "favs" of old. Can't remember where I came across this recipe a couple of decades ago but even the fussiest eaters among family and friends have loved it. :-)
