Peel tomato and cut very small. Grate small onion. Place tomato and onion in saucepan with butter and cook until tender. Add beaten egg, mixed herbs, chopped parsley, grated cheese, and season to taste with salt and pepper. Cook all ingredients together, and let cool.Can be stored in the refrigerator. This is a very tasty sandwich filling or dip.
