Grab and Go Eggs

Ingredients:

  • 2 eggs
  • 2 Tbsp. milk
  • dash salt
  • 1 (12 or 16 0z) heatproof disposable cup
  • 2 Tbsp. shredded cheddar cheese

Directions:

In a small bowl, combine eggs, milk, salt and beat well. Pour into cup and place in microwave. Microwave on high for 1 minute. Stir mixture. Top with cheese. Microwave an additional 30 seconds or until eggs are firm. Stir before serving

My mom used to make Baked Eggs: She would grease some muffin tins (you can spray with non stick). Then, she would put in a piece of sausage or ham, cut and cooked to the right size. Then an egg dropped in, some cheese on top and bake it.

I am not sure of the temp or the time, so you might want to experiment with one egg and see how it goes. I just remember they were yummy.
