No-Tuna Tofu Spread

Ingredients

  • 1 pack Extra Firm Tofu, drained and mashed with fork
  • 1-2 Tbsp. Mayo
  • 2-3 Tbsp. Mustard
  • 1/4 cup dried parsley
  • To taste: Lemon Pepper and Garlic Salt

Directions

Stir all together, spread on bread, top with favorite sandwich veggies and enjoy.

Makes for great pick-nicks and only requires minutes to prepare!

Remember. Tofu has little flavor on it's own, so don't be afraid to shake that lemon pepper. *Grins*

Source: A vegan friend inspired me with this recipe. She of course uses Veganaise instead of Mayo and uses dill instead of parsley.

I'm not a Vegan, but have been a vegetarian for over 29 years, so this recipe looks totally YUMMY to me! ... I'll probably also add a hard boiled egg to the mix & maybe a dash of garlic or onion powder... Another trick my mother taught me when making egg salad (if you're NOT using "Miracle Whip", but mayonnaise) is to add about a capful of any kind of vinegar (about 1/4 teaspoon)... It gives it the egg-salad zest! ... I'm wondering if a dash of vinegar would be good in this? ... Another idea, my grandmother used to put sliced or chopped green or black olives in her egg (or potato) salad... Oh, Yes, & a garden-fresh tomato on top of the tofu salad in some crunchy wheat bread! ...Hmmm, my imagination is running wild. You can tell I'm hungry!

Yes! Tofu can become anything at all, as it really has no taste of it's own... I once tasted an incredible apple/tofu/cinamon pie at a potluck. It was delightful to see, smell & eat!
