Ingredients

  • sponge or layer cake
  • 5 egg whites, stiffly beaten
  • 2/3 cup sugar
  • 1 qt. Neopolitan ice cream - or your choice flavor
  • sugar

Directions

Trim the sponge cake to measure 1 inch larger on all sides than the ice cream. Place on a wooden cutting board. Add sugar to the beaten egg whites and beat until stiff peaks form. Place ice cream on top of trimmed sponge cake. Spread meringue over the ice cream, carefully sealing to the edges of cake. Sprinkle top of meringue with sugar. Bake in 450 degree F oven about 5 minutes, until golden brown. Slide from board onto serving plate and slice.
