Chocolate Cookie Cheesecake

Crumbs

  • 2 cups Oreo cookie crumbs
  • 2 Tbsp. butter
  • 1/4 cup firmly packed brown sugar
Combine cookie crumbs, butter and brown sugar. After mixing, press crumbs into springform pan and bake at 350 degrees F. for 12 minutes. Set aside.

Filling

  • 4 (8 oz) packages cream cheese, softened
  • 1 1/4 cups sugar
  • 1/3 cup heavy cream
  • 2 Tbsp. flour
  • 2 tsp. vanilla
  • 4 eggs
  • 2 cups Oreo cookie crumbs
Beat cream cheese until creamy. Gradually add sugar, beating well after each addition. Add cream, flour and vanilla. Beat vigorously. Add eggs, one at a time, beating well. Pour 3 1/2 cups batter onto cookie crust and top with cookie crumbs. Pour remaining batter on top and bake at 325 degrees F for 1 hour and 15 minutes. Turn oven off and leave cheesecake in for 30 minutes. Remove from oven and cool completely. Remove sides of pan.

Topping

  • 1/3 cup heavy cream
  • 1 1/2 cups chocolate chips
  • 1 tsp. vanilla
  • Oreo cookie crumbs
Combine cream, chocolate chips and vanilla and melt over low heat. When melted, remove from heat and spread mixture over cheesecake and allow to drip over sides. Garnish with some more cookie crumbs. store in refrigerator.
