Carrot Salad

Ingredients:

  • 1 (3 oz.) pkg. orange gelatin
  • 1 1/2 cups boiling water
  • 1 cup mini marshmallows or 12 large ones, cut up
  • 1 small can crushed pineapple, drained
  • 1 cup grated carrots
  • 1/2 cup cream or Dream Whip, whipped
  • 1/2 cup mayonnaise

Directions:

Mix gelatin and boiling water; add marshmallows and stir until both are dissolved. Allow to cool. Add pineapple and carrots. When mixture begins to set, add Dream Whip or whipped cream and mayonnaise. Let set and cut in squares. If desired, add 1 cup more marshmallows for added volume.

Tip: Carrot Salad

Ingredients:

  • 1 lb. shredded carrots
  • 1 green pepper, diced
  • 1 small jar pimento stuffed olives
  • 1/2 cup Miracle Whip
  • 2 Tbsp. sugar
  • 2 Tbsp. vinegar

Directions:

Combine shredded carrots, green pepper that has been seeded and diced and pimento stuffed olives that have been sliced. Take approximately 1/2 cup Miracle Whip and combine with approximately 2 Tbsp. each of sugar and vinegar and combine with vegetables. Add the dressing until just moistened. Do not add all at once or it may be too runny.

Ingredients:

  • 2 lbs. shredded carrots
  • 1 can crushed pineapple, drained
  • 1/2 cup sour cream
  • 8 oz. raisins
  • 1 1/2 cups mayonnaise

Directions:

Combine all ingredients and chill.

Recipe: Carrot Salad

Ingredients

  • 1 med. onion
  • 1 can tomato soup
  • 1/2 cup oil
  • 3/4 cup sugar
  • 1/4 cup vinegar
  • 1/2 green pepper
  • 1 tsp. celery seed
  • 1 tsp. Worcestershire sauce
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 lb. cooked, sliced carrots

Directions

Combine ingredients; add 2 lb. sliced cooked carrots. You can use frozen or canned carrots, if you prefer.

Recipe: Carrot Salad

Ingredients:

  • 2 cups shredded carrots
  • 1/2 cup raisins
  • 3 Tbsp. sugar
  • 1 1/2 Tbsp. vinegar
  • 1/4-1/2 cup mayonnaise

Directions:

Blend carrots and raisins in mixing bowl. In separate bowl mix other ingredients, then mix with carrots and raisins. Chill.

Recipe: Loose Carrot Salad

Ingredients

  • 1 bunch carrots
  • 1 cup nutmeats
  • 1 small stalk celery
  • 1 small can pineapple chunks
  • mayonnaise (to your taste)

Directions

Grate or shred carrots and mix with cubed celery and pineapple. Add nuts. Toss together with mayonnaise.
