Turnip Salad

  • 3 medium turnips, chopped
  • 3 carrots, chopped
  • 1/2 small cauliflower, chopped
  • small green pepper, chopped

Add all veggies to 2 cup hot water and 1 tsp. salt. Bring to a boil and simmer 5 minutes. Drain immediately.

  • 1/3 cup sugar
  • 1/2 cup vinegar
  • 1/4 cup oil
  • 1 tsp. curry powder
  • 1 tsp. salt
  • 1/4 tsp. pepper

Mix this dressing and pour over veggies. Toss once to mix. Refrigerate 3-4 hours and serve.
