Rhubarb Dream

This is so easy and good that for years I keep going back to it, even though I have tried many rhubarb recipes over the years.

Ingredients:

  • 1 cup sifted flour
  • 5 Tbsp. powdered sugar
  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup flour
  • pinch of salt
  • 2 cups or more rhubarb cut into 1/2 inch pieces.

Directions:

Blend first 3 ingredients together like you would for a pie crust and then press into a 9 inch pan. Bake at 350 degrees F for 15 minutes.

Mix 2 well beaten eggs with the 1 cup sugar, the 1/4 cup flour and the pinch of salt. Add rhubarb and mix. Pour over baked crust and return it to oven to bake again for 35 minutes.

Note: Original recipe called for 1-1/2 cups sugar but I cut it down because I thought it was too sweet. If you like, you could cut it down to 1-1/4 cups. I just like the tartness of the rhubarb.

Time:10 to 15 Minutes Preparation Time
50 Minutes Cooking Time

I am so sorry that I overlooked the directions re baking in first paragraph. I apologize & will read more closely after this.

In the first paragraph of directions, it said to bake it at 350 for 15 minutes. You must have overlooked that.

Your directions say to "Mix and pour over crust and bake again for 35 minutes." Was there a first time baking? Was the crust supposed to be baked first? Was the reason why your recipe stated "bake again"?
I would like to bake this but I am a little confused right now on the directons. Thanks,
