I have tried a lot of rhubarb recipes but this is the best on in my opinion.
Ingredients:
- 1 cup sifted flour
- 5 Tbsp. powdered sugar
- 1/2 cup butter or margarine
- 2 eggs, well beaten
- 1 1/4 cup sugar
- 1/4 cup flour
- pinch of salt
- 2 cups cut up rhubarb.
Directions:
Mix first three ingredients together as for pie crust. Press into a 9 inch pan.
Mix the two eggs, sugar, the 1/4th cup flour, salt together. Add the 2 cups of cut up rhubarb. Mix and pour over crust and bake again for 35 minutes.
