Spicy Millet Pudding
- 1/2 cup raw millet
- 1 1/2 cups water
- 1/4 tsp. sea salt
- 1/4 cup maple syrup
- 1/4 cup raisins
- 1/4 cup grated coconut
- 1 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. clove
Preheat oven to 350 degrees F. Bring millet, water, and salt to a boil in a saucepan. Remove from heat and add other ingredients. Pour into a buttered 1 quart casserole or pie plate. Cover and bake in preheated oven for 1/2 hour. Serve warm.
You can substitute the raisins for dates or figs. You can substitute the coconut for chopped almonds.
