- 5 tomatoes, sliced
- 1/2 cup olive oil
- 2 Tbsp. lemon juice
- 1 Tbsp. finely cut fresh basil or 1 tsp. dried basil
- 1/4 tsp. finely chopped garlic
- 1 tsp. salt
- 2 Tbsp. chopped scallions
- 1 Tbsp. finely chopped parsley
Arrange tomato slices on deep round platter. Mix oil, vinegar, basil, garlic, salt and pepper and pour over tomato slices. Combine scallions and parsley and sprinkle on top of tomato slices. Chill 2 hours.
