Butter Cookie Dough Peach Cobbler

Ingredients

Dough:
  • 1/2 cup all purpose flour
  • 1/4 tsp. baking powder
  • pinch salt
  • 8 Tbsp. unsalted butter; softened
  • 1/2 cup sugar
  • 1/2 large egg; or one yolk
  • 1/4 tsp. vanilla extract
Fruit Filling:
  • 1-3/4 lbs peaches; peeled, pitted and sliced
  • 2 tsp. corn starch
  • 1/3 - 1/3 cup sugar
  • 1 tsp. vanilla extract; optional
  • pinch cloves; optional

Directions

Dough:

Mix flour, baking powder and salt in small bowl and set aside. Beat butter and sugar until well blended. Beat in egg and vanilla. Add flour mixture; stir until just combined.

Fruit Filling:

Toss to coat peaches, cornstarch, sugar, and any optional ingredient. Drop dough onto prepared fruit by heaping tablespoons. Bake at 375 degrees F for 45-55 minutes.

This recipe is for a 8 inch square or 9 inch round baking pan. May easily be doubled for a 13x9 inch pan.
