Last August, as we were passing though Greensboro, NC, we stopped by the State Farmer's Market and bought a hand basket of peaches. I needed the basket for picking vegetables in the garden and thought I could freeze the extra peaches. I'm down to one package of frozen peaches and now I wish we had purchased a bushel.

We didn't eat any until a couple of months ago when I started experimenting making peach cobbler. We have found it to be irresistible and even better the next day, so I try not to make it too often.

To freeze the peaches, I cut them in small pieces and added a little sugar. I put 2 cups of peaches into each quart Ziploc freezer bag.

Total Time: 1 hour

Yield: 9 servings

Ingredients:

  • 2 cups frozen peaches (sweetened)
  • 1 cup Betty Crocker Gluten Free Bisquick
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup milk
  • 4 Tbsp melted butter

Steps:

  1. Preheat oven to 350 degrees F.
  2. Place butter in 2 quart Pyrex dish and melt it while oven is heating.
  3. Thaw peaches until you can separate them.
  4. Mix sugar and Bisquick in medium mixing bowl.
  5. Add 2 eggs and 1 cup milk. Blend with mixer.
  6. Place peaches in butter.
  7. Pour batter over the peaches.
  8. Bake approximately 45 minutes at 350 degrees F.

  10. Serve warm with ice cream.
