Reuben Salad I

Ingredients

  • 1 1/2 cup macaroni
  • 8 oz. corned beef, chopped
  • 8 oz. Swiss cheese, chopped
  • 1 Tbsp. caraway seeds
  • 8 oz. sauerkraut
  • 8 oz. Russian dressing

Directions

Cook macaroni. Add chopped corned beef, Swiss cheese and add caraway seeds. Drain sauerkraut and add to other mixture. Add Russian dressing until moist, use as much or as little dressing as to taste. Note: Cool macaroni before adding to salad.

Reuben Salad II

Ingredients

  • 1 cup very thin strips corned beef or cooked ham (4 oz.)
  • 1 cup cubed Swiss cheese (4 oz.)
  • 1 can sauerkraut, well drained (16 oz.)
Mustard Dressing:
  • 1/3 cup mayo
  • 1 Tbsp. each prepared mustard and horseradish,
  • 1 tsp. Worcestershire
  • 1/4 cup well drained pickle relish

Directions

Mix together corned beef, cheese and sauerkraut, Mix dressing ingredients together, add to salad and mix well. Chill

Robin this is a good sandwich too if you you leave the macaroni out. Just stir the ingredients together, heat up and serve on toasted rye bread! Yum!

Robin, thanks! We had this for lunch and thought it was very tasty. We are Reuben lovers. It is good with sliced tomatoes as a side dish. I used Thousand Island drsg. because that is what I had on hand but want to try the Russian drsg. next time.
