This brown rice salad is perfect as a side dish or as a light meal. Make a big batch and bring it to your next potluck.
Ingredients:
- 1 1/3 cup cooked brown rice
- 1/4 cup chopped red bell pepper
- 2 Tbsp. diced red onion
- 1/2 oz. feta cheese
- 1 oz. chopped pecans
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. diced sun dried tomatoes
Directions:
Combine all ingredients in a bowl. Chill for 1 hour. Toss and serve. Makes 2 cups.
