Reuben Casserole

Ingredients:

  • 2 cups sauerkraut, drained
  • 2 medium tomatoes, sliced
  • 1/2 cup low-cal Thousand Island salad dressing
  • Ad
  • 8 oz. sliced corned beef
  • 1 tsp. caraway seed
  • 1 1/2 cups grated Swiss cheese
  • 1/4 cup rye bread or cracker crumbs
  • 1 Tbsp. butter

Directions:

Layer sauerkraut, tomato slices, dressing, corned beef, and cheese in a 1 1/2 qt. baking dish. Bake at 375 degrees F for 15 minutes. Remove from oven. Mix the rye bread crumbs or cracker crumbs, margarine, and caraway seed with fork til crumbly. Sprinkle crumb mixture evenly over top. Return to oven and bake 15 minutes longer. Serve hot.

If you like Reuben sandwiches, you will like this recipe. Very good and filling!

Ingredients:

  • 1 (14 oz.) can sauerkraut, drained
  • Ad
  • 1 (8 oz.) container sour cream
  • 1 Tbsp. minced onion
  • 2 cups bread crumbs, dried
  • 1 (12 oz.) can corned beef
  • 4-6 oz. Swiss cheese, grated
  • 1/2 tsp. garlic salt
  • 3/4 cup margarine, melted

Directions:

Mix sauerkraut, sour cream, onion, and garlic salt. Place in buttered casserole dish. Top with diced corned beef. Sprinkle cheese over, then layer fine bread crumbs and pour melted margarine over all. Microwave on high for at least 10 minutes or until it is hot clear through. Allow to set a short time before serving.

Servings: 6-8
Prep Time: 20 Minutes
Cooking Time: at least 10 Minutes

Ingredients:

  • 32 oz. sauerkraut, drained
  • 8 oz. med. noodles
  • 2 cans chicken, celery or mushroom cream soup
  • 1 1/3 cup milk
  • 1/2 cup onion
  • Ad
  • 3 Tbsp. mustard
  • 12 oz. corned beef
  • 8 oz. Swiss cheese, grated
  • 3/4 cup rye bread crumbs, toasted
  • 2 Tbsp. margarine

Directions:

Layer sauerkraut and noodles in 9x13 inch pan. Mix together soup, milk, onion and mustard; spoon over noodles. Layer corned beef, cheese and bread crumbs on top. Dot with margarine. Cover tightly and bake in 350 degree F oven for 1 hour.

Quick easy and delicious.

Ingredients:

  • 1 package crescent rolls
  • 2 lb. browned hamburger with one small onion
  • 2 cups shredded cabbage
  • 1 can mushroom soup
  • salt and pepper to taste

Directions:

Brown hamburger and onion. Season to taste. Cook cabbage until limp then add soup. While cooking the hamburger and cabbage:

Spread 1/2 of the crescent rolls in greased casserole dish. Drain hamburger, pour onto crescent rolls, add cooked cabbage mixture. Top with flattened second half of crescent rolls.

Bake 15 minutes at 375 degrees F.

  • 11 oz. pkg. sauerkraut, drained
  • 2 tomatoes, sliced
  • 2 Tbsp. Thousand Island dressing
  • 2 Tbsp. butter
  • 8 oz. shredded corned beef
  • 8 oz. shredded Swiss cheese
  • 1 can flaky buttermilk biscuits
  • 2-3 rye crackers (crushed)
  • 1/4 tsp. caraway seed

Directions

Spread drained sauerkraut in 9x13 inch dish. Top with tomatoes. Dot with dressing and butter. Cover with corned beef and cheese. Bake at 425 degrees F for 15 minutes. Remove from oven. Take biscuits and separate each biscuit into 3 layers and put over meat-cheese mixture, slightly overlapping to form 3 rows. Sprinkle with rye crackers crumbs and caraway seed. Return to oven and bake 15-20 minutes more. Serves 6-8

This is a family favorite and is requested when making large dinners for any occasion.

Ingredients

  • 6 cups uncooked egg noodles
  • 2 cans (14 oz. ea.) sauerkraut, rinsed and well drained
  • 2 cans (10-3/4 ea.) condensed cream of chicken soup, undiluted
  • 3/4 cup milk
  • 1/2 cup chopped onion
  • 3 Tbsp. prepared mustard
  • 2 cups (8 ounces) Swiss cheese
  • 3/4 lb.sliced deli corned beef, chopped
  • 2 slices day-old lite rye bread
  • 2 Tbsp. butter, melted

Directions

Cook the noodles according to the package directions. In a large bowl, combine the sauerkraut, soup, milk, onion, and mustard. Drain noodles and stir into the sauerkraut mixture. Transfer to a greased 13x9x2-inch baking dish. Sprinkle with the corned beef and cheese. Place bread in a food processor, cover and process until mixture resembles coarse crumbs. Toss crumbs with butter and sprinkle over the casserole. Bake uncovered, at 350 degrees F. for 40 to 45 minutes, or until bubbly.


Yield: 5 or 6 servings
