Strawberry Pie with a French Flair
- 1 baked 9 inch pastry shell
- 2 packages cream cheese
- 2 Tbsp. honey
- dash salt
- 1/2 tsp. milk to moisten cheese
- 1/2 cup honey
- 1/2 cup water
- 1 Tbsp. unflavored gelatin
- 1 cup strawberries, crushed, do not drain
- 2-3 drops red food coloring, opt.
- 1 1/2-2 cup whole strawberries, halved lengthwise
Cream together cream cheese, 2 Tbsp. honey and salt. Moisten with milk. Spread over bottom of 9 inch baked pastry shell. Combine in saucepan 1/2 cup honey, water, gelatin, crushed strawberries and food coloring. Cook over medium heat stirring constantly until slightly thickened and clear 10-15 minutes. Cool until mixture mounds. Arrange sliced berries over cream cheese. Spoon gelatin mixture over berries. Chill 2-3 hours.
