Italian Casserole


  • 1 lb. ground beef
  • 1/4 cup chopped onion
  • 2 cans tomato sauce (8oz. size)
  • 1 tsp. parsley flakes
  • 1/2 tsp. leaf oregano
  • Ad
  • 1 tsp. leaf basil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 (10 oz.) pkgs. frozen chopped spinach, thawed and drained well
  • 2 cups riccota cheese
  • 1 (8 oz.) pkg. mozzarella cheese sliced


Brown ground beef and onion; drain off fat. Stir in tomato sauce, parsley, oregano, basil, 1/4 tsp. salt, and pepper. Simmer uncovered 10 minutes, stir occasionally. Meanwhile, combine spinach, ricotta cheese, and remaining 1/4 tsp. salt. Spoon spinach mixture around edges of 9x13 inch baking dish; pour beef mixture into center. Cut each slice mozzarella cheese into three strips and arrange in lattice pattern over meat. Bake at 375 degrees F for 20 minutes. Serves 8.
