Italian Spinach and Noodle Casserole


  • 8 oz. pkg. fettuccine noodles
  • 12 oz. carton small-curd cottage cheese
  • 8oz. pkg. Monterey Jack cheese, grated
  • 1-2 eggs, well beaten
  • Ad

  • 10 oz. pkg. frozen chopped spinach, thawed and drained
  • 1 Tbsp. dried parsley
  • 1/2-1 tsp. garlic salt
  • 1/8 tsp. pepper
  • 2 cup spaghetti sauce


Prepare noodles according to package directions; drain. Mix together cottage cheese, Monterey Jack cheese, eggs, spinach, parsley, garlic salt and pepper in a large bowl. Add noodles and mix thoroughly. Pour into a greased 9x13 inch baking dish. Spread spaghetti sauce evenly over noodles. Bake in preheated 350 degree F oven for 30-45 minutes or until bubbly.
