Combine and shake all dressing ingredients, then refrigerate. Combine the almonds and sugar in skillet until coated and browned. Mix with lettuce or spinach, mandarin oranges and green onions.

Mandarin Orange Almond Salad
Ingredients:
1/2 cup sliced almonds
3 Tbsp. sugar
1/2 head romaine lettuce
1/2 head iceberg lettuce
1 cup chopped celery
2 whole green onions, chopped
1 small can mandarin oranges, drained
Dressing
1/2 tsp salt
dash of pepper
1/4 cup vegetable oil
1 Tbsp. chopped parsley
2 Tbsp. sugar
2 Tbsp. red wine vinegar
Dash of Tabasco sauce
Directions:
In a small pan over medium head, cook almonds and sugar stirring constantly until almonds are coated and sugar dissolved. Watch carefully as they will burn easily. Cool and store in air tight container. Mix all other ingredients and chill. Mix lettuces, celery and onions. Just before serving add almonds and oranges. Top with dressing. For Dressing: Mix together and shake.
